Breakfast on the gasser

Some mornings you just want to cook breakfast outside.  So what is a foodie to do?  Get the gas grill going, get the griddle on and get cooking.

 

 

 

 

This time is is sausages, potato pancakes, eggs and Hollandaise sauce.  The potato pancakes are pretty easy.  See recipe at the end of this post.

 

 

 

 

 

 

 

 

 

Potato Pancakes:

2 medium size potatoes, shredded

1/2 Onion chopped (your choice of onion here)

1 heaping Tablespoon full of flour

1 Egg

S&P to taste

 

Direction:

Shred the potatoes into a bowl and cover with water.  Stir around to help get as much starch out as possible.  Drain off as much water as possible, then using your hands, squeeze out as much water from the potatoes and put into another bowl.  Add in the chopped onion and stir.  Once done, sprinkle with the flour and toss, add salt and pepper and toss, then add the egg and stir around until the egg is well incorporated.

 

Get out your frying pan or griddle, add some vegetable oil and place scoops of the potato on it.  Fry about 6-8 minutes then flip over.  Fry another 6-8 minutes and you’re ready to serve.
