Was having family over for dinner and decided to stoke up the Rocky Mountain Smoker and smoke the chicken thighs.
It was then get the thighs ready while the smoker coals got ready. The thighs were prepared with my 1/3, 1/3, 1/3 method. 1/3 Salts, 1/3 sugars and 1/3 spices.
Once the smoker was ready, on went the thighs for a couple hours of low and slow cooking time.
After a couple hours, the thighs were ready for enjoying.
A little potato salad on the side and you have a meal fit for a king!
