Nothing like a hot bowl of soup to lift your spirits, and nothing like a homemade hot bowl of soup at that! We have a couple rather large zucchini’s from my parents garden, so we grabbed some additional vegetables, beef stock and ground beef and made a delicious pot of beef vegetable soup.
Not much to do for this recipe. Brown some ground beef in a deep pan or stock pot and then begin adding the vegetables. Add whatever vegetables you like.
For the ground beef, I added some black pepper, salt, worcestershire sauce, kitchen bouquet and some dried tarragon.
Then chop up your vegetables add to the pot and then top with beef stock.
To finish the soup off before starting an hour or so of simmering, I added 1 large can of chopped stewed tomatoes.
Cover with a lid and let simmer. This soup simmered for about 2 hours. About an hour into the process, I added about 3/4 cup of barley and let it cook right in the soup.
