Flavourful healthy dinner that is sure to please.
Start by frying your chicken breast in a little olive oil and butter. If you use a non-stick pan, you won’t need much of either. Once you’ve started frying the chicken, add salt and pepper. For convenience, use an oven safe frying pan for the final step of the meal prep.
After about 6 minutes or so, flip, season and continue frying. If you have an instant read thermometer, you are looking for an internal temperature of 165ºF. While the chicken is cooking, make you favorite guacamole recipe.
My guacamole has:
1/2 Cup finely chopped onion
1 Lime zested and half the juice
1/2 Cup chopped cilantro
2 cloves of grated fresh garlic
Salt and pepper to taste.
When the chicken is almost done, turn the broiler on on your oven. Turn off the heat on the stove and spoon your guacamole onto the chicken.
Top with Pepper jack cheese and get it into the oven under the broiler.
Serve with a side salad and you have a flavourful meal you’ll come back to again and again.
