The Kootenay Thai restaurant in Creston BC (Been closed for just over a year now) had a Thai Pineapple fried rice dish that my wife loved. So since it was her birthday yesterday, we decided to make her favorite dish. The combination of sweet and savory make this a great dish for everyone. If you like it more on the spicy side, add more Thai Chilli’s to the dish. I would keep the chilli’s to a medium in the dish and allow people to add more to their dish if they like it spicier.
